Chipotle Prawn Cocktail

Like the wonderful sandwich, chipotle prawn cocktail is a bit of an old-school dish. But it’s popular for a reason, and that reason is that it tastes mighty fine. We’ve made it Mexican and upped the flavour by using our Gran Luchito Chipotle Mayo & Ketchup for the sauce and popped avocado into the mix underneath. This is a delicious updated take on prawn cocktail that is summer in a glass and must be tried!

We reckon this would be epic served as a starter before the Gran Luchito Mexican Steak.

How to make it

  1. Mix together the Gran Luchito Chipotle Chilli Mayo, Ketchup and lemon juice.
  2. Add the prawns to the sauce and mix well.
  3. Mix the lettuce with the cucumber, avocado, a squeeze of lemon juice, a slug of olive oil, salt and pepper.
  4. In glasses or bowls, lay the dressed salad in the bottom, top with the prawns, then spoon over the sauce and let it drizzle down. Serve with lemon wedges.
