Chicken Sandwich with Bacon and Avocado

Chicken Sandwiches are staple lunchtime classic.  If you’ve got great ingredients, a sandwich is a simple way to create something greater than the sum of its parts. That’s what we did with this chicken sandwich with bacon and avocado, spiced up with our smoked chilli mayo.

How to make it

  1. Pre-heat the oven to 180C.
  2. Heat a griddle pan until it’s very hot.
  3. In a dish, add a little olive oil, salt & pepper. butterfly the chicken breast and rub it in the oil mix until completely covered.
  4. Add chicken to the griddle pan and give it some good colour.
  5. Transfer chicken to oven-proof dish and finish in the oven taking care not to overcook (about 5-10 mins).
  6. Add the bacon to the griddle pan and cook until crispy.
  7. Half the avocado and remove the stone. Remove flesh and either slice or mash.
  8. Toast the bread/roll (if desired) and spread both halves with a little Gran Luchito Chipotle Mayo.
  9. Remove chicken when cooked and leave to rest for a few minutes before slicing.
  10. Add salad leaves then pile on the bacon, chicken and avocado. Season and serve immediately.
