A perfectly soft-boiled egg encased in a perfectly ripe avocado, wrapped in perfectly deep-fried streaky bacon glazed in perfectly spicy Gran Luchito Chipotle Honey.
Soft boil an egg
Carefully peel it (more carefully then we did)
Slice an avocado and remove the stone
Remove the skin
Enlarge the stone hole until your egg fits snuggly inside
Reassemble the avocado and get the bacon ready
Wrap in bacon and secure

Deep fry until crispy

How to make it
Soft boil an egg (5½ minutes in boiling water should do the job).
Submerge in cold water and leave to cool. Peel carefully.
Cut the avocado down the middle, remove the stone and carefully remove the skin. You’ll probably need to enlarge the hole where the stone was to fit the egg inside. Do this bit-bybit testing the fit as you go (you don’t want to be removing too much). Eat these scraps immediately.
Put the avocado back together with the egg inside.
Wrap the eggacado in streaky bacon as tightly as possible.
Meanwhile, get a deep-fryer going with some oil (alternatively use a saucepan with vegetable oil in it. Heat to approximately 180C. Too hot and the oil will bubble too aggresively and unwrap the bacon.
