Tomatillo Chicken Tacos Recipe

Make It: Mexican
  • 300g Leftover roast chicken (best to have a mix of breast and thigh leg)
  • 8 corn tortillas (2 for each taco)
  • Half a white cabbage, finely shredded
  • Handful fresh coriander
  • 3 tablespoons Gran Luchito Tomatillo Salsa
  • Fresh red chilli (optional)
  • Juice of half a lime
  • 1 lime to serve, cut into wedges
  1. Shred the roast chicken and place in a mixing bowl with the shredded cabbage, lime juice, half the Gran Luchito Tomatillo Salsa, most of the chopped coriander and a pinch of salt & pepper. Mix well.
  2. Fill warmed tortillas with the chicken mix and top with remaining tomatillo salsa and sprinkle with remaining coriander and sliced red chilli.
  3. Serve with wedges of lime.
