This is a pretty serious pasta bake. We’ve used our awesome spicy Mexican meatballs and thrown them in with a rich tomato and red pepper sauce marbled with a velvety mozzarella and parmesan white sauce to make something very special indeed.

Meatballs
  • 5fl oz Milk
  • 1 cup Panko breadcrumbs
  • 11oz Minced beef
  • 7oz Minced pork
  • 1 Onion
  • 1 Garlic clove
  • 2tsp Gran Luchito Smoked Chilli Paste
  • 10ml Water
  • 1 Handful parsley (finely chopped)
  • 1tsp Dried oregano
  • 3oz Pancetta/bacon lardons
  • Salt & pepper
The Rest
  • 2 tbsp Butter
  • 2 tbsp All-purpose flour
  • 2¼ Cups milk
  • 2½ Cups Parmesan
  • Salt
  • Pepper
  • ¼ Cup Olive oil
  • 1tsp Dried oregano
  • 1 Onion
  • 1tsp Sugar
  • 4 Garlic cloves
  • 2tbsp Tomato paste
  • 1 Can of chopped tomatoes
  • 2tsp Gran Luchito Smoked Chilli Paste
  • 1 Red bell pepper
  • Handful fresh basil
  • 1lb 2oz Rigatoni (or similar; deep ridges are good for catching sauce)
  • 1lb Mozzarella

Meatballs
  1. Firstly, combine the breadcrumbs with the milk and stir. Leave to soak in while you prepare the other ingredients.
  2. Cook pancetta until cooked through. Place on a chopping board and chop finely before returning to the pan. Lower the heat.
  3. Add the onion and garlic to a food processor (alternatively just grate them).
  4. Add onion and garlic to the pancetta, along with oregano and Gran Luchito Smoked Chilli Paste. Stir and cook for about 7-8 mins.
  5. Add a splash of water, stir and continue to cook until evaporated (5-6 mins). Leave to cool slightly.
  6. In a large bowl, combine the pancetta mixture with the soaked breadcrumbs, the minced beef and pork, parsley and a good pinch of salt and pepper.
  7. Mix well (with your hands preferably) and form into small balls (approx. 1inch in diameter). Pile on a plate and refrigerate for at least half an hour.
  8. Griddle or roast the meatballs to give them some colour (they don't need to be completely cooked through as they'll be in the oven later).
Pasta Bake
  1. Once you have your meatballs ready, make a roux by adding the butter to a pan. Once melted, add the flour and stir well until combined. Cook on a low heat for about 2-3 minutes.
  2. Gradually whisk in the milk and continue whisking until it boils and then reduce heat and simmer until it thickens (about 8-9 minutes).
  3. add the finely grated parmesan and stir in. Once melted, set aside whilst you prepare the rest.
  4. Over a medium heat, add a little olive oil and add the finely chopped onion and garlic along with the oregano and chunkily chopped red pepper.
  5. Cook for about 15 minutes when the onion and pepper should be softened.
  6. Add the chopped tomatoes, the tomato paste, Gran Luchito Smoked Chilli Paste, sugar, salt & pepper and stir. Leave to cook for 20 minutes then blitz in a food processor to a smooth sauce. Taste and adjust seasoning.
  7. Meanwhile, add pasta to boiling well-salted water (with a little oil if you like to prevent it sticking together). Cook for 5-6 minutes (it should be al dente; it will finish cooking in the oven).
  8. Pre-heat oven to 350F.
  9. Throw in the meatballs, some torn up basil and stir (be careful not to break them up).
  10. Combine pasta with the tomato sauce and meatballs in a large ovenproof dish.
  11. Cut the mozzarella into chunks. Add half to the white sauce and stir. The rest will go on top.
  12. Use a spatula to fold the cheesy white sauce through the tomatoey pasta (don't mix it completely).
  13. Throw on the remaining mozzarella, a drizzle of olive oil and a good sprinkle of salt & pepper.
  14. Bake in the oven for 15-20 minutes, or until the top is golden and the edges are crusty. If you want it extra crunchy on top, broil it for a little while (but please don't burn it after all that hard work!!)
