Five Ways To Spice Up A Jacket Potato
The jacket potato is a wonderfully versatile vessel for an endless number of amazing toppings. Here are five of our favourite ways to spice up a humble backed potato with the help of the Gran Luchito range.
Baking A Potato
Firstly, a few pointers on how to cook the perfect jacket potato from The Guardian’s Gran Luchito-loving food writer Felicity Cloake:
- Pre-heat your oven to 220C.
- When the oven is up to temperature, wash the potatoes (Maris Piper, King Edward, Estima, Desiree) well, and prick each in a couple of places with a fork. Allow to dry slightly, while you tip your salt into a shallow bowl. Roll each potato in the salt to give an even coating, and then place on the middle shelf of the oven, preferably directly on the rack.
- Cook for around an hour, then give them a squeeze – the potato should just give, and the skin should be distinctly crisp. If not, leave them for 10 minutes, and check again – if you overcook them, the insides will be dry, so it’s important to be vigilant.
- Take out of the oven and put whole on to plates: they shouldn’t be opened until you’re ready to eat, and then preferably by hitting them sharply so they burst, for maximum fluffiness.

Uno: Smoked Chilli Mayo & Spring Onion
This loaded skin works an absolute treat. Once you’ve got yourself a perfectly cooked jacket, cut off the top, scoop out as much of the inside as you can. Mash this up with a generous spoonful of Gran Luchito Smoked Chilli Mayo and some chunkily chopped spring onions before popping his jacket back on (load it back in the crispy skin). If you want to get real crazy, throw in some chorizo/wholegrain mustard.
Dos: Chilli Con Carne
The Pasilla Oaxaca chillies used in Gran Luchito lend themselves perfectly to making chilli con carne. It brings a beautifully smoky spicy flavour. Tres: Smoked Chilli Mayo & Mackeral
We love tuna mayo made with out Smoked Chilli Mayo, but mackerel mayo is on another level. Whichever fish you choose, drain off the liquid and mix with Gran Luchito Smoked Chilli Mayo and a little salt & pepper to taste, then get it on your jacket.
Cuatro: Chilli Baked Beans & Smoky Chorizo
If you haven’t tried making baked beans with Gran Luchito yet, you’re seriously missing out. Making them from scratch with chorizo is truly amazing, but if you’re feeling lazy, simply stir a teaspoon of Gran Luchito Smoked Chilli Paste into the beans before you heat them (you can add more or less depending on how hot you like them). Fry up some chorizo until crispy then mix before crowning your waiting potato with it.
Cinco: Spicy Sour Cream & Chive
Like the mayo & spring onion idea above, this is another loaded jacket potato. Scoop out the cooked potato. Meanwhile, stir a teaspoon of Gran Luchito Smoked Chilli Paste with sour cream and a handful of chopped chives (you could use spring onion here too). Stir this into the potato flesh before returning back into the skin. Top with a little extra spicy sour cream.
