What a great little idea these are; a great way to cook and present your sausage stuffing for Christmas or any roast dinner for that matter. Sausage Stuffing Balls Recipe

Ingredients Ingredients

  • 8 small red onions
  • 2oz breadcrumbs
  • 5oz Sausages (we went for pork & apple)
  • 1tbsp Gran Luchito Smoked Chilli Paste
  • Handful sage (finely chopped)
  • 2tbsp olive oil
  • 1oz butter

Instructions Instructions

  1. Peel the onions and cut the tops off around 2cm down. You can also cut off the other end to leave a nice flat surface (cut this about 1cm up).
  2. Arrange the onions in a roasting tray and drizzle with olive oil, salt & pepper. Roast for around 25mins at 350F.
  3. Once softened, remove from the oven and leave to cool. Once cool, squeeze out the centre of the onions leaving 2 outer layers. Retain the removed onion and chop finely.
  4. Gently fry the chopped onions with breadcrumbs, chilli paste and butter until nicely combined and golden (10mins).
  5. Leave to cool slightly, then combine with the sausage meat.
  6. Fill the hole in each onion with this mixture and return to the oven for another 30mins.
  7. If the outer layer is slightly dried out, gently peel this away to reveal a tender layer beneath for serving.
