Deep Fried Mac N Cheese Balls
Mac n cheese is all about indulgence, and don’t let anyone tell you otherwise. But how can you make an already very indulgent dish even more indulgent?

Make a roux with butter, flour, chopped garlic and Gran Luchito Smoked Chilli Paste
Gradually whisk in milk until sauce thickens Add cheddar, parmesan and mozzarella until melted Add macaroni, leave to cool then form into balls. Dip each into breadcrumbs, beaten egg, breadcrumbs (again). Deep-fry the balls in vegetable oil until golden and crispy.

Deep Fried Mac n Cheese Balls Recipe
1 hour 15 mins 2oz Butter 3 tbsp Plain flour 3 Garlic cloves 1 quart Milk 1lb Macaroni 5oz Cheddar cheese 3½oz Parmesan 3 oz Mozzarella 11oz Panko breadcrumbs 2 Eggs (beaten) 1 bottle Vegetable oil (for deep frying) 2tsp Gran Luchito Smoked Chilli Paste For dipping: Gran Luchito Smoked Chilli Ketchup Boil a large pan of salted water and cook macaroni. Once cooked, add a splash of olive oil to prevent sticking together and leave aside. Meanwhile, melt the butter in a saucepan and then add the flour. Stir until you have a paste and cook for approximately 10 mins over a low heat (taking care not to burn it). Add the finely chopped garlic and Gran Luchito Smoked Chilli Paste paste and cook for another 10 mins. Gradually whisk in the milk getting rid of any lumps. Continue cooking and stir occasionally. Stir in the 3 cheeses to the sauce until melted. Mix the pasta with the cheese sauce. Season to taste. Allow the mixture to cool (put in the fridge/freezer to achieve this more quickly). The mixture needs to be quite solid as you're going to form it into balls. Once cool, use wet hands to form into golfball sized spheres. Smother each ball in the breadcrumbs, then in the beaten egg, then once more in the breadcrumbs. Once all balls are done, place on a tray and refrigerate for 15 mins to firm up. In the meantime, heat the vegetable oil in a deep saucepan. Once hot enough (test a little piece of the mixture and it'll bubble), add each ball in sets of about ⅚ and cook until golden. Remove with a slotted spoon and place on kitchen roll to absorb the oil. Serve the Mac and Cheese Balls with Gran Luchito Smoked Chilli Ketchup as dips.
