Put mince (beef & gammon), Gran Luchito Smoked Chilli Paste and seasoning in a bowl loosely broken up. Mix together gently, trying to minimise working the meat or you’ll get a tough burger.
Split into eight and gently pat into patties about 0.5cm thick.
Take a generous chunk of cheese and place in the middle of 4 of the patties. Use the other 4 patties to seal in the cheese, gently squeezing the edges together.
Chill for 30 mins
Get your grill hot and place patties straight from the fridge on to the grill. The secret here is not to turn too often. Really you want to cook one side, flip and cook the other side until done. I find 5 mins per side is ample but it will depend how hot your grill is.
Burgers are done at 165C but if you’ve minced your own meat you could serve medium rare. You do so at your own risk though!!!
When cooked, rest the patties for 5 mins covered with foil then assemble your burgers and trough them down.
Personally, while the burgers are resting I like to toast my buns this stops them getting soggy from meat juices and your burger toppings.
We enjoyed ours with a nice guacamole, but salad and bacon would work equally as well.
